"It's a surreal and emotional moment for us," Leis revealed, reflecting on their journey.
Origin of the Vision
The couple's vision began back in 2015, intending to establish a cozy spot in The Ward in Guelph, complete with a brewery, a small bar, a pizza oven, and a smoker. However, plans changed when they secured a location at the former David's Country Diner, located at the junction of Highway 6 and Wellington Road 51.
Challenges Faced
So, what caused these delays? The realities of financing a restaurant proved to be a significant challenge. "Setting up a restaurant involves so many components that I was completely blindsided by," said Leis. "Without substantial financial backing, everything takes much longer than expected." Throughout this process, the couple faced tight budgets and even ran out of funds on several occasions. To make ends meet, Leis obtained his master electrician license and started a new business venture.
Current Status of the Brewery
Currently, the brewery is not yet operational due to unspecified setbacks. "We've encountered a few unfortunate events," Hurren commented, although specifics were not disclosed. For now, the focus remains on perfecting their smokehouse offerings before launching their beer line.
The BBQ Journey
Interestingly, Leis, who has no formal training in smoking meats, has been able to hone his craft through a decade of experience. His journey took an unexpected turn when Hurren, a lifelong vegetarian, could not resist his BBQ. "Jess was a vegetarian for 18 years until she tried my BBQ, and that changed everything!" Leis shared with a hearty laugh.
Staffing and Community Response
Despite initial staffing challenges, Leis is learning the ropes of restaurant management from his newly hired staff while they continue to search for permanent team members. The couple expressed their excitement about the support they've received from the community, noting that they've already seen repeat customers in just a few days since the grand opening.
Operating Hours and Invitation
Ward One Smokehouse and Brewery operates Wednesday through Sunday, focusing on walk-in customers. Their hours are from 11 a.m. to 10 p.m. Wednesday to Friday, noon to 10 p.m. on Saturday, and noon to 8 p.m. on Sunday.
