In an exciting culinary development, Genevieve Lee, the talented runner-up from Season One of MasterChef Singapore, is taking the dining scene by storm with her latest venture, Shio & Sato. This pop-up stall, featuring her delectable take on shio pan—Japanese-style crescent-shaped salted rolls—has quickly become a must-visit destination, attracting long queues and selling approximately 3,000 rolls in just one weekend!

Transition from Sourbombe

After four successful years running Sourbombe, her acclaimed sourdough doughnut brand, Lee is eager to explore new frontiers in the baking world. "I've created so many variations of doughnuts that now feels like the perfect time for a new challenge," she stated, underlining her desire to showcase her versatility as a baker beyond just one signature product. "I want to be known as a baker who can juggle multiple concepts.”

Passion for Shio Pan

Lee's passion for shio pan is clear. "It’s always been one of my favorite types of bread. The texture, the flavor—crusty outside, soft inside, with melting butter—perfectly captures what I love," she explained, adding that her decision was influenced by the recent trend of savoring rich, comforting breads.

Overwhelming Response to Shio & Sato

The overwhelming response to Shio & Sato has exceeded all expectations. "We're so grateful for the support! The demand has been crazy—1,000 shio pan were sold on weekdays and 1,500 on weekends," she enthused. To manage the rush, the team has limited each customer to six buns, ensuring that more people can enjoy the treat as they bake fresh batches throughout the day.

Menu Offerings

The Shio & Sato menu features a tantalizing mix of both sweet and savory fillings. Customers can choose from savory options like Green Chilli Onion and Miso Butter Corn, priced at S$4.80, and even a luxurious Crab Salad Kombu at S$9. For those with a sweet tooth, the offerings range from Hokkaido Cream to Matcha Strawberry, all from S$5.50 to S$6.

Future Plans

Don't worry if you miss out on the pop-up, because Lee has plans to keep her shio pan available. After the pop-up closes on October 31, 2024, a selection of these delightful rolls will still be obtainable at her Sourbombe outlets.

A Permanent Location?

With the incredible success of Shio & Sato, Genevieve is already eyeing a permanent brick-and-mortar store. "We're definitely looking to establish a permanent location," she shared, hinting at exciting future possibilities for more innovative bakery products.
